Loaded Nachos

How’s it going?

Hope you’ve all had a wonderful weekend. Mine has been fairly good – productive and caught up on some much needed sleep too! Couple of lie ins, couple of naps, happy days… Feeling refreshed which often isn’t the case after squeezing too much into the two days off.

This week’s recipe, (if I can even call it that – it’s embarrassingly simple!) is ideal for a Sunday night in, or even when you have a few people over for a catch up – hold on, why am I even justifying a reason to have nachos?! Please proceed to make this whenever you deem appropriate, or in this case, for a movie night. Much more exciting than you’ll find in the cinemas + far more satisfying than any amount of popcorn!

 

Loaded Nachos

Ingredients:

  • Large bag of tortilla chips (I use Doritos and prefer the lightly salted / touch of lime for these…)
  • Cheese, grated – and lots of it, I had mild cheddar and double gloucester in the fridge so I used a bit of both.
  • Jalapenos, if you like it hot – I tend to eat around these as I’m a complete wimp!
  • 500g chicken, diced
  • Cajun / mexican / BBQ seasoning, whatever you have lying around – it’s just so much easier to use a pre-made powder mix sometimes but if you’re feeling keen I recommend a blend of smoked paprika, cayenne, chilli, garlic powder, salt, pepper and cumin
  • Glug of olive oil
  • Soured cream, salsa and guacamole to serve, more often than not, I just buy these from the supermarket, but there’s nothing like home made sauces

Method:

  1. Preheat your oven to gas mark 5.
  2. Rub your choice of spice on to your diced chicken and leave for 10-15 minutes to marinade.
  3. Place a frying pan on the hob at a high heat until the pan is nice and hot. Bring it down to medium-high and drizzle in a little olive oil. Toss in your chicken and cook through, you can test this by cutting open a big chunk and checking its white through. Gobble up a piece or two – chef’s treat.
  4. Spread half the tortilla chips in a tray and sprinkle over half of your cheese, half of the jalapenos and half of the cooked chicken.
  5. Repeat with other half. This means everything is nicely distributed and you don’t just have a mound of plain tortilla chips beneath the surface.
  6. Place the lot in to the oven for 5 – 8 minutes until the cheese has melted and is starting to bubble.
  7. Top with a generous helping of soured cream, salsa and guac and get stuck in!

Super yum, super quick, great for sharing, and oh, so satisfying! What are you waiting for…?
