How’s it going?
I’ve spent the last few days glued to the TV watching the start of the World Cup. I don’t really watch football regularly but this is the exception. I’m almost upset we didn’t think about our holiday overlapping on a solid week of matches but ultimately, who am I kidding, travel > football.
Aside from that, I’ve been spending the last week or two gorging on great summery ingredients, which brings me to the subject of this post – blueberry & rosemary smash mocktails!

They’re a great way to take advantage of the seasonal berries and you can knock up the syrup in advance, making it an easy, make ahead recipe for guests.

The perfect drink to sip on in the sunshine – fruity berries, aromatic rosemary and a refreshing kick from the lemon. Best served, ice cold!

Oh, and, because you can never reaaaally have too many berries, I dropped a handful into the drinks and weaved some through drink skewers to serve alongside.

Ingredients
- 300g blueberries
- 150g granulated sugar
- Juice of 3 – 4 lemons
- 1 pack of rosemary
- Sparkling water
- 1 lemon (to serve – optional)
- 1 tbsp granulated sugar (optional)
- Extra blueberries (optional)
Instructions (serves 6)
- Add the blueberries and sugar to a pan on medium low heat with the leaves of 4/5 sprigs of rosemary (10g). Heat on medium for 8-10mins until the mixture is properly bubbling, stirring occasionally. About 5 or 6 minutes in, once properly softened, squeeze the berries with the back of a wooden spoon.
- Once done, pour the mixture into a large bowl through a sieve. Use the back of a spoon to really get all the juices through before adding the juice of 3 – 4 lemons (depending on how sharp you want it / how juicy the lemons are).
- Cover the bowl then pop the syrup into the fridge to cool down completely / until you’re ready to serve.
- To serve – slice your reserved lemon in half and rub over the rim of your six glasses before dipping into a plate with the sugar. Slice the rest of the lemon and use to decorate the glasses.
- Pour the blueberry syrup evenly into the glasses, add a handful of your extra berries and ice before topping up with the sparkling water. Garnish with a sprig of rosemary each, weave a couple of blueberries onto cocktail skewers placing on top of your glasses before adding straws. Taste and and adjust to your likings with extra lemon or fizzy water.
