We went berry picking a week or so ago and inevitably, came home with more strawberries than we could feasibly eat. I made berry coulis, froze a tonne for smoothies and also made this little number:

Strawberry salsa!

I mean – it’s not anything by way of conventional – not even sure it should be called salsa, but it’s a delicious salsa-inspired dip if nothing else.

Sweet strawberries, sharp onions, herby parsley and spicy jalapeno all muddled together with a generous squeeze of lime to bring it all together – perfectly balanced and so moreish.

You can serve it up with tortilla/nacho chips; it’ll work with fajitas alongside soured cream and we even made fish tacos topped with this stuff.

I can confirm: it was deliiicious!

Super easy to throw together, totally customisable and ever so pretty too. ❤

Ingredients
- 500g strawberries
- Half a white onion
- A couple of sprigs of fresh parsley, finely chopped
- Half a jalapeno (scale up or down depending on your heat preference)
- Zest and juice of a lime
- Salt to taste (would recommend around 1-2 tsp)
Instructions
- Chop strawberries, onions and jalapeno into very small chunks and add to a large bowl.
- Add parsley, lime and salt and mix well to combine.
- Cover and place in the fridge for a couple of hours for the flavours to mingle and develop.
Notes:
- It’s a totally customisable recipe:
- if you like it hot – use extra jalapenos
- if you have extra sweet strawbs – up the lime and salt to compensate
- if you don’t have white onion – use red
- if you don’t have parsley – use coriander (I hate it so I defaulted to parsley!)
